Step-by-Step Instructions
- Begin by cooking the quinoa in boiling salted water over medium heat for about 15 minutes, until a small white sprout becomes visible (or follow the package instructions). Remove from heat, cover, and let it sit for 5 minutes to swell. Drain and transfer to a mixing bowl.
- Thinly slice the onions and sauté them in a pan with a bit of oil until they are golden brown. Mix the sautéed onions with the quinoa, adding the egg, plain yogurt, and chives. Season with salt and pepper, and mix in the sifted flour.
To Finish
Heat a skillet with a generous tablespoon of oil. Using a spoon, form patties and place them in the skillet. Cook each side for about 4 minutes. Transfer the patties to paper towels before serving. This recipe makes about ten patties the size of those in the photo, but you can opt to make smaller ones if preferred.
