Indulge in these crispy whiting parcels: a heart of tender fish and crunchy vegetables wrapped in a golden brick pastry. This is a refined, light recipe that’s ready in 30 minutes.

Ingredients

  • Whiting: 4 fillets
  • Carrot: 300 g
  • Leek: 300 g
  • Garlic: 5 cloves
  • Brick Pastry Sheets: 4
  • Heavy Cream: 300 ml
  • Thyme: 1 sprig
  • Butter: 20 g
  • Olive Oil: 100 ml
  • Salt: to taste
  • Pepper: to taste

    1. Begin by peeling, washing, and finely slicing the carrots and leeks. Melt butter in a large skillet and add the carrots and leeks. Cook gently for 8 to 10 minutes. The vegetables should be crisp yet undercooked.
    2. In a pot, boil the peeled garlic cloves in slightly salted water. Change the water two or three times during cooking to make the garlic more digestible. Blend the boiled garlic with the leaves from the thyme sprig and the heavy cream. Season with salt and pepper. Keep the sauce warm by placing it in a bowl over a water bath.
    3. Preheat your oven to 390°F. To assemble the crispy parcels, lay out the brick pastry sheets on a work surface. Place half of a whiting fillet on each sheet, then top with some carrot and leek strands. Season with salt and pepper. Cover with the other half of the whiting fillet.
    4. Carefully fold in the edges of the brick pastry sheets and tie the ends like a candy wrapper with kitchen string.
    5. Brush with olive oil, then bake in the oven for 10 minutes.
