Making your own praline at home is something I highly recommend— it’s absolutely divine, far more aromatic and flavorful than store-bought versions. This homemade praline, infused with a hint of pistachio, serves as the perfect finishing touch to elevate your desserts or baked goods. Combining the crunchy texture of nuts with the sweetness of caramel, this homemade concoction is sure to delight your taste buds.

Ingredients

For 10 servings:

– Hazelnuts: 125 grams
– Unsalted Almonds: 125 grams
– Optional Unsalted Pistachios: 60 grams
– Whole Cane Sugar (such as Rapadura): 125 grams

Preparation

Begin by coarsely blending the hazelnuts, almonds, and pistachios. You can choose to keep them whole and blend them later. Heat the sugar in a skillet over medium heat and let it lightly caramelize for about 2 minutes. Then, add the mixed nuts to the caramelized sugar. Alternatively, you could start by lightly toasting the nuts in the skillet before adding the sugar.

Allow the mixture to caramelize together over medium heat, stirring occasionally. This should take about 5 to 7 minutes. Once done, remove from heat and allow the mixture to cool. Finally, blend the mixture again to your desired consistency (I prefer a coarse blend, but you can grind it finer if you like).
