Easy and Quick Crispy Dried Fruit Cookies
One of my favorite quick and simple recipes to whip up is for crispy dried fruit cookies, which are perfect to pair with your coffee or tea. These crunchy delights made with almonds, walnuts, and hazelnuts are not only easy to make but also have an irresistible texture. Their balanced mix of nuts and a touch of sweetness will surely please any sweet tooth.
Ingredients
– For 4 people
– Eggs: 2 units
– Granulated Sugar: 200 grams
– Choice of Almonds, Walnuts, Hazelnuts: 200 grams
– All-purpose Flour: 200 grams
Preparation
– Total Time: 31 minutes
– Prep Time: 1 minute
– Cooking Time: 30 minutes
Step 1
Preheat your oven to 350°F (180°C). In a mixing bowl, beat 2 eggs. Add 200 grams of granulated sugar followed by 200 grams of your chosen nuts (almonds, walnuts, and hazelnuts) and mix well. Then, incorporate 200 grams of all-purpose flour into the mixture.
Step 2
Using your hands, shape the mixture into 3 or 4 logs and place them on a baking sheet lined with parchment paper. To achieve thin slices (like the ones shown in the picture), flatten the logs well.
Step 3
Bake in the oven for 30 minutes at 350°F (180°C).
Finishing Touches
Immediately after taking them out of the oven, quickly cut the cookies into thin slices (they harden very quickly!). Allow them to cool at room temperature. Enjoy your crispy dried fruit cookies!
