Ingredients
For 4 servings:
– Flour: 200 g
– Sugar: 15 g
– Baking powder: 1 packet
– Eggs: 2
– Milk: 150 ml
– Light UHT semi-thick cream: 250 ml
– Unsalted butter: 80 g
– Carrots: 2
– Zucchini: 2
– Olive oil: 2 tbsp
– Minced garlic: 1 clove
– Chopped onion: 1
– Curry powder: 1/2 tsp
– Chopped parsley and chives: 1 tbsp
– Salt and pepper to taste
Salad:
– Mixed greens
– Black olives: 10, chopped
– Light cream: 2 tbsp
– Vinegar (apple or raspberry): 1 tbsp
– Olive oil: 1 tbsp
– Minced onion: 1
– Capers
– Roasted, peeled hazelnuts: 1 tbsp
– Salt and pepper to taste
Preparation
1. In a bowl, mix the flour, sugar, baking powder, and a pinch of salt and pepper. Whisk the eggs with the milk and light cream, and gradually incorporate them into the dry ingredients to form a smooth, lump-free batter. Melt the butter and mix it into the batter. Let it rest for 30 minutes.
2. Wash and finely dice the carrots and zucchinis. Heat the olive oil in a pan, sauté the garlic and onion until golden, then add the vegetables and season with curry, salt, and pepper. Cook over low heat, stirring for about 5 minutes, then set aside.
3. Stir the cooked vegetables, parsley, and chives into the waffle batter.
4. Preheat the waffle iron, pour in the batter, and cook for 3 to 4 minutes. Repeat until all the batter is used.
5. For the salad: Toss the mixed greens with the chopped olives. Whisk together the light cream, vinegar, olive oil, salt, and pepper to create a dressing. Mix the salad with the dressing.
To Serve
Place two waffles on each plate, top with the dressed salad, and sprinkle with olives, a bit of onion, capers, and some hazelnuts.
