Ingredients
– 1 whole French guinea fowl
– 2 yellow onions
– 800 grams of fresh carrots
– 1 tablespoon of liquid honey
– 1 tablespoon of balsamic vinegar
– 12 sprigs of thyme
Preparation
1. Preparing the Vegetables
Preheat the oven to 375°F (190°C). Peel the carrots and cut them diagonally. Peel the onions and cut them into quarters.
2. Cooking
Oil the bottom of an oven-safe dish. Place half of the thyme sprigs, the carrots, and the onions in the dish. Place the guinea fowl on top of the vegetables. Drizzle with olive oil, add the remaining thyme, and season with salt and pepper. Pour a small amount of water into the dish, then bake in the oven for 1 hour at 375°F (190°C).
3. Preparing the Marinade
While the guinea fowl is cooking, prepare the honey marinade. In a bowl, mix the honey, balsamic vinegar, and a drizzle of olive oil. Season with salt and pepper. Set aside.
4. Finishing Touches
After cooking for an hour, remove the dish from the oven and brush everything with the honey and balsamic vinegar mixture. Return to the oven and bake for an additional 30 minutes at 375°F (190°C), or adjust the time based on the size of the guinea fowl, allowing about half an hour per 500g.
Serving
Once well browned and cooked through, remove the guinea fowl from the oven and serve with the roasted vegetables. Enjoy your meal!
