– Flour: 140 g
– Cornstarch: 30 g
– Eggs: 3
– Milk: 8 cl
– Mild chorizo: 90 g
– Grated Gruyère cheese: 70 g
– Baking powder: 1 packet
– Salt: to taste
– Pepper: to taste
Preparation
1. Start by preheating your oven to 240°C (464°F). Remove the skin from the chorizo and chop it into very small cubes. In a large bowl, mix the flour and baking powder together. In another bowl, whisk the eggs with the milk, then season with salt and pepper. Gradually add the beaten eggs, milk, and olive oil to the dry ingredients, mixing gently until just combined. Stir in the Parmesan cheese, then gently fold in the chorizo cubes.
2. Fill your madeleine molds three-quarters full and bake at 240°C (464°F) for about 14 minutes, or until they are golden and puffed.
