1. Start by mixing the flour and baking powder in a bowl. In another bowl, whisk together the eggs, olive oil, milk, and add seasoning to taste. Combine this mixture with the flour mixture and stir until you achieve a smooth batter.
2. Trim and wash the spinach. Cook it in a pan without adding water or oil. Once cooked, roughly chop the spinach and cut the feta cheese into small cubes. Stir the spinach, feta, and grated Gruyère into the batter.
To Finish
