This summer jam perfectly blends the sweetness of peaches, the coolness of melon, and the subtle aroma of mint. Ingredients
For 6 people:
– Peaches: 1 kg
– Melon: 300 g
– Granulated Sugar: 900 g
– Mint: 2 sprigs
– Unwaxed Lemons: 2
Instructions
1. Briefly blanch the peaches in boiling water to facilitate peeling. Chop them into pieces along with the melon.
2. Place the chopped peaches and melon in a large pot and cover with sugar. Let them sit until the sugar completely dissolves.
3. Add the mint leaves along with the zest and juice of the lemons, then bring the mixture to a boil.
4. Cook over high heat for 35 minutes.
To Finish
Remove the fruits from the pot, mash them with a fork, and return them to the pot. Bring the mixture to a boil again and then can the jam in jars.
