Prepare this Mediterranean-flavored salad 30 minutes before serving to allow the flavors to meld together, but remember to add the feta cheese just before serving.
Ingredients
For the salad:
– Multicolored cherry tomatoes: 200g
– Cucumber, sliced into half-moons: 1 whole
– Red onion: 1/2 whole
– Feta cheese: 100g
– Black olives: 80g
– Fresh basil: 1 handful
– Yellow bell pepper: 1/2 whole
For the vinaigrette:
– Olive oil: 4 tbsp
– Balsamic vinegar: 1 tbsp
– Dried oregano: 1 tsp
– Lemon juice: 1/2 lemon
– Minced garlic: 1 clove
– Honey: 1/2 tsp
– Salt and pepper: to taste
Preparation
1. **Vegetable Preparation**
Wash all the vegetables thoroughly. Halve the cherry tomatoes and slice the cucumber into half-moons. Cut the red onion into thin strips. Place all the prepared vegetables in a large bowl and add the olives.
2. **Vinaigrette Preparation**
In a small bowl, mix the olive oil, balsamic vinegar, dried oregano, lemon juice, minced garlic, honey, salt, and pepper together. Drizzle the vinaigrette over the vegetables and gently toss to coat all the ingredients evenly.
When Serving
Just before serving, mix in the feta cheese cubes. Garnish with freshly chopped basil leaves and a few twists of black pepper from the grinder.
