This Christmas log has been the favorite of my husband and son since 1983. It’s a must-have for our Christmas: no celebration is complete without a homemade log! This recipe is foolproof and very easy, yielding a very soft cake and a light chocolate mousse.

### Ingredients

– **Eggs**: 12
– **Sugar**: 150 grams
– **Vanilla Sugar**: 1 packet
– **Flour**: 150 grams
– **Dark Baking Chocolate**: 200 grams
– **Thick Cream**: 150 grams

### Preparation

#### 1. Making the Chocolate Mousse
Melt the chocolate. Mix in the thick cream, then add six egg yolks one at a time, and finally fold in six egg whites beaten to stiff peaks. Refrigerate for 2 hours.

#### 2. Biscuit Preparation
Preheat the oven to 350°F (180°C). Mix six egg yolks with 150 grams of sugar until the mixture becomes pale and creamy. Stir in the flour, then gently fold in the six egg whites beaten to stiff peaks. Spread the mixture about 1cm thick on a baking sheet lined with parchment paper. Bake for 8 to 10 minutes, or until the top is slightly golden.

#### 3. Biscuit Resting Time
Flip the biscuit onto a damp cloth. Wait 10 minutes then peel off the parchment paper. Roll the biscuit with the cloth and let it rest for 1 hour.

#### 4. Assembling the Log
Carefully unroll the biscuit and moisten generously with a mix of half water and half cognac or another liqueur of your choice. Spread the chocolate mousse over it, then roll it back into a log shape. It’s okay if a bit of the mousse spills out; just add more inside to fill.

#### 5. Resting the Log
Spread the remaining mousse on top of the log and around the edges of the dish. Chill overnight for the best flavor development, at least 12 hours before serving.

#### Log Decoration
Before serving, use a fork to make grooves on the surface of the log. Decorate with chocolate shavings made with a vegetable peeler or a similar tool. Add traditional Christmas decorations as desired.
