1. Melting the Chocolate

Break the chocolate into small pieces. Melt it gently using a double boiler or in the microwave in 30-second intervals. Allow it to cool slightly.

2. Preparing Egg Yolks

Separate the yolks from the whites, placing the yolks in one bowl and the whites in another. Stir the yolks into the melted chocolate and mix well until the mixture is smooth.

3. Whipping the Egg Whites

Add a pinch of salt to the egg whites and whip them until they form stiff peaks.

4. Folding in Egg Whites

First, mix about one-third of the whipped egg whites into the chocolate to lighten it. Then, gently fold in the rest of the whites with a spatula, being careful to keep the mixture airy.

5. Chilling
