Ingredients
For 4 people:
– Grapefruit: 1 unit
– Sugar (equal to the weight of the peels)
– Lemon juice
– Water
– Icing sugar (for coating)
Preparation
1. Start by slicing off the ends of the grapefruit, then carefully remove the peel. Slice the peel into thin strips.
2. To remove the bitterness from the peels, blanch them by repeating the following step four times: place the peels in a small saucepan, add 1 tablespoon of lemon juice, and cover with water. Bring to a boil, let it simmer for 15 seconds, then drain in a colander and rinse the peels under cold water. After the fourth time, drain well and allow to cool completely.
3. If the peels are still moist, pat them dry with paper towels, then weigh them. In a saucepan, combine the peels with an equal weight of sugar. Cover with water and heat over low heat. Allow the mixture to simmer until all the liquid has evaporated (about 15-20 minutes). Let the peels cool in the pan.
4. Carefully spread the peels on a rack without overlapping. Allow to dry for about 12 hours.
To Finish
Once the peels are dry, roll them in icing sugar and store them in an airtight container.
