– Ripe tomatoes, 500 g
– Cucumber, 1/2
– Green bell pepper, 1/2
– Onion, 1/2
– Garlic clove, 1
– Olive oil, 5 cl
– Sherry or balsamic vinegar, 5 cl
– Soft bread (like sandwich bread), 100 g
– Salt
– Pepper

1. Prepare and Chop the Vegetables
Begin by blanching and deseeding the tomatoes. Cut them into large wedges and place them in a mixing bowl. Add the peeled and diced half cucumber and half green bell pepper, along with the finely sliced small garlic clove and half an onion.
2. Season and Marinate the Vegetables
Drizzle the vegetables with olive oil. Season with a pinch of salt and pepper, then toss everything together so the veggies are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least one hour, though letting it sit for 24 hours is ideal for flavors to fully meld.
3. Soak the Bread in Vinegar
Cut the sandwich bread into large cubes and place them in a small bowl or deep plate. Pour over the sherry or balsamic vinegar, ensuring the bread soaks up all the liquid.
4. Blend and Strain the Mixture
Transfer the marinated vegetables and vinegar-soaked bread into a food processor or blender. Blend until smooth. You can enjoy the gaspacho as is or strain it through a fine sieve to remove the bread solids for a smoother texture.
Chill Before Serving
Refrigerate your gaspacho for another hour before serving to ensure it’s perfectly chilled.
