– Avocado: 2
– Red Onion: 1
– Tomato: 2
– Emmental Cheese: 4 slices
– Paprika: 1 tablespoon

1. Prepare the Sweet Potato Waffles
Start by peeling the sweet potatoes and grating them raw. Steam the grated sweet potatoes until tender, then mash them into a puree.
In a large mixing bowl, whisk the eggs with some olive oil. Add the flour and baking powder to the eggs and stir to combine. Fold the mashed sweet potatoes into this mixture, seasoning with salt, pepper, and your choice of spices.
Preheat your waffle iron and lightly grease the plates. Cook the waffles until they are golden and set them aside.
2. Assemble the Burger
Thinly slice the chicken breasts. Season with paprika and cook them in a skillet with the sliced red onion in some olive oil until the chicken is well cooked.
To build the burger, place some lettuce on one sweet potato waffle, add the cooked chicken, slices of tomato, avocado, and a slice of Emmental cheese. Top with another sweet potato waffle. Enjoy your meal!
