– Paris mushrooms: 1 kg
– Puff pastry: 2 sheets
– Grated Gruyère cheese: 200 g
– Oil: 2 tbsp
– Heavy cream: 25 cl
– Egg yolk: 1
– Salt
– Pepper

1. Sauté the mushrooms to evaporate their moisture
Heat the oil in a skillet and cook the mushrooms over low heat for 10 minutes (longer if frozen).
2. Add cream and Gruyère to bind the filling
Remove the skillet from the heat and stir in the heavy cream, cheese, salt, and pepper using a wooden spoon.
3. Preheat the oven and arrange the filling on the pastry
Turn on the oven to 300-350°F (150-180°C). Place one sheet of puff pastry with its paper on a baking sheet. Spoon the mushroom mixture onto the center of the pastry.
4. Seal the pie and brush with egg yolk
Cover with the second pastry sheet and seal the edges by rolling them. Beat the egg yolk and brush it over the pie using a pastry brush or a paper towel.
5. Bake the mushroom pie
Bake for 30 minutes in the oven.
