- Cauliflower – 1 whole
- Milk – 300 ml
- Flour – 2 tablespoons
- Butter – 20 grams
- Curry powder – 1.5 tablespoons
- Sweet paprika – 2 teaspoons
- Cantal cheese – 70 grams
- Salt – 2 pinches
- Pepper – 1 pinch
Step-by-Step Preparation
1. Preparing the Cauliflower
Start by cleaning the cauliflower and separating it into small florets. Steam these florets for about 20 minutes until they are tender.
2. Making the Béchamel Sauce
In a large bowl, melt the butter in the microwave for about 1 minute. Once melted, mix in the flour. Bring the milk to a boil and let it boil for a few moments. Gradually pour the hot milk over the butter and flour mixture, whisking continuously. Season the mixture with curry powder, sweet paprika, salt, and freshly ground pepper. Return the mixture to low heat, stirring vigorously, and then set aside.
3. Assembling the Gratin
Preheat your oven to 180°C (356°F). Place the steamed cauliflower florets in a baking dish. Evenly pour the béchamel sauce over the cauliflower. Grate fresh Cantal cheese on top of the sauce-covered florets. Bake in the oven for 30 minutes.
Serving
At the end of baking, if the gratin is not sufficiently golden, broil for an additional 5 minutes. Serve hot and enjoy immediately.
