– Lamb shoulder: 600g
– Fresh figs: 12
– Balsamic vinegar: 50 ml
– Olive oil: 2 drizzles
– Red onion: 1
– Rosemary: 5 sprigs
– Garlic: 4 cloves
– Wheat berries: 240g
– Butter: 30g
Preparation
1. **Ingredient Prep**
Preheat the oven to 350°F (180°C). Slice the red onion. Wash the figs and cut them in half. Keep half of them refrigerated for later use.
2. **Preparing the Dish**
In a baking dish, place half of the figs along with the lamb roast, garlic, and red onion. Drizzle with olive oil, season with salt and pepper, then add half of the balsamic vinegar and the sprigs of rosemary.
3. **Cooking**
Roast in the oven for 15 minutes. Then, pour in the remaining balsamic vinegar and continue roasting for an additional 15 minutes, or longer depending on your preference.

Meanwhile, cook the wheat berries as directed on the package, then drain and mix with butter, salt, and pepper.
