Ingredients

– Turkey roast, boneless (about 1 kg): 1 piece
– Fresh mushrooms: 350 g
– Firm potatoes: 1 kg
– Butter: 30 g
– Salted butter: 20 g
– Full-fat cream: 250 ml
– Cornstarch to thicken the sauce: 1 tsp
– Chicken broth: as needed
– Onion: 1 piece
– Garlic clove: 1
– Sage: 1 sprig
– Rosemary: 1 sprig
– Salt: to taste
– Freshly ground pepper: to taste

Method

1. Season the roast with salt and pepper. In a large pot, melt 30 g of butter and brown the roast on all sides.

2. Add the whole onion, garlic clove, rosemary, and sage. Cook on low heat for about 5 minutes. Cover with chicken broth and let it cook, covered.

3. Meanwhile, peel, wash, and chop the potatoes into large cubes. Add them to the pot with the roast. Clean and slice the fresh mushrooms, then sauté them in a pan with 20 g of salted butter until they take on color.

4. Remove the roast and let it cool (allow it to cool before slicing to ensure nice, firm slices that don’t fall apart when cut). Remove the onion, garlic, rosemary, and sage from the roast’s sauce. Add a ladle of the cooking juice to the mushrooms.

5. Let it cook until the juice has slightly reduced (about 10 minutes). Mix the cornstarch with the cream and stir into the sauce.

6. Once the roast has cooled, remove any strings or netting and slice it carefully. Place the meat slices back into the mushroom sauce and warm gently. Adjust the seasoning with salt and pepper. Serve surrounded by the potatoes and garnished with sage and rosemary.
