This dish is a Moldovan specialty known as “Sarmale lenoase,” which translates to “Lazy Sarmale.” Traditional Sarmale consists of cabbage or vine leaves rolled and stuffed with meat and rice—a festive staple in Moldovan cuisine. You can find various recipes on my blog. Today’s recipe is a deconstructed version of the traditional dish, making it quicker to prepare. It features the same ingredients but is presented in a straightforward, rustic style, making it a practical choice for everyday meals.

Ingredients

For 6 Servings:

– Sunflower oil: 100 g
– Pork (I use pork stew meat): 600 g
– Onions: 2 units
– Tomato paste: 100 g
– Green cabbage: 500 g
– Rice: 400 g
– Salt (to taste): 1.5 tsp
– Pepper (to taste): 0.5 tsp
– Bay leaves: 2
– Water: 900 g

Preparation

1. **Ingredient Prep**

Begin by cutting the meat into small pieces. Peel and finely chop the onions. Thinly slice the cabbage.

2. **Cooking Process**

Heat a large skillet or Dutch oven with the oil. Add the meat pieces and sear them on all sides for about 10 minutes. Add the chopped onions and continue to cook for another 10 minutes over medium heat, stirring occasionally. Stir in the tomato paste and cook for an additional 3 minutes. Next, add the sliced cabbage, stir well, and cook for another 10 minutes, stirring occasionally. Rinse the rice and add it to the skillet. Season with salt, pepper, and add the bay leaves along with the water. Cover and let it cook on medium heat for 20 minutes.

3. **Resting Time**
