– Heavy cream: 188 g

– Baking powder: 7 g
– Mango jam: 1 jar
– Heavy cream 30%: 200 g
– Mascarpone cheese: 200 g
– Food coloring

1. Making the Sponge Cake

Start by beating the eggs with the sugar until the mixture triples in volume. Sift in the flour mixed with the baking powder. Whip the 188 g of heavy cream until it forms stiff peaks, then fold it into the egg mixture.

2. Preparing the Pan

Line a tall baking mold with parchment paper and pour the batter into it. Bake at 320°F (160°C) for approximately 1 hour and 10 minutes.

3. Whipped Cream

Whip the mascarpone and the cold cream together using a mixer until stiff peaks form. Divide the cream into several portions to color each with food coloring (in this case, three colors were used).

4. Assembling the Cake

Once the sponge cake has cooled, slice it horizontally into three layers. Spread a layer of mango jam on the first layer, then add the colored creams using a piping bag. Alternate the colors (such as pink, yellow, violet, etc.), and then smooth the surface with a spatula to achieve a uniform appearance. Finish by decorating with edible pearls, for instance.
