Ingredients

– 1 Red Label Farmer’s Guinea Fowl, cut into pieces
– 4 Apples
– 3 Shallots
– 50 g Pecans
– 15 cl Maple Syrup
– 10 cl Chicken Broth
– 1 tbsp Sugar
– 1 Cinnamon Stick
– 2 Star Anise
– A knob of Butter
– 2 tbsp Olive Oil
– Salt
– Freshly ground Pepper

Step 1
Preheat your oven to 350°F (180°C). Place the pecans in a bowl, drizzle with 3 tablespoons of maple syrup, add the sugar and a generous pinch of salt. Mix well and spread out on a baking sheet lined with parchment paper. Bake in the oven for 10 minutes. Remove and allow to cool.
Step 2
Heat a casserole dish with olive oil. Brown the guinea fowl pieces on all sides. Once browned, return all pieces to the pot, season with salt and pepper, and add the quartered shallots. Pour in the broth, add the cinnamon stick and star anise, cover and simmer for 30 minutes.
Step 3
Meanwhile, cut the apples into quarters and brown them in a pan with some butter. Set aside.
Step 4
Open the casserole, drizzle with the remaining maple syrup, stir, add the apples, cover and continue cooking for another 15 minutes.
