This is a wonderfully simple yet delicious recipe from my mother, who used to prepare these potatoes under a covered dish, known as a cloche. This method of smothered cooking helps to retain all the flavors and the tender texture of the potatoes. Infused with garlic and thyme, they release rich flavors that perfectly complement both meat and fish.
Ingredients
For 4 people:
– 8 medium potatoes
– 3 to 4 cloves of garlic
– 1 sprig of thyme
– Salt, to taste
– Pepper, to taste
Preparation
1. Begin by preheating your oven to 400°F (about 200°C). Thoroughly wash and dry the potatoes, then slice them in half lengthwise. Place two slices of garlic and a couple of small sprigs of thyme on each potato half, then season with salt and pepper.
To Finish
Place four potato halves on each square of aluminum foil. Seal the foil packets tightly and bake in the oven at 410°F (around 210°C) for approximately 45 minutes. Check the doneness by inserting a knife into the potatoes; it should slide in easily.
