Ingredients

For 6 people:

– Salmon fillet: 300g
– Frozen spinach: 450g
– Béchamel sauce: 360g
– Crepes: 12 pieces
– Butter: 30g
– Salt and freshly ground pepper

For the Béchamel Sauce

– Cornstarch: 18g
– Milk: 30cl
– A teaspoon of milk
– Butter: 20g
– Grated Gruyère cheese: 45g
– Grated nutmeg: 2 pinches
– Salt and freshly ground pepper

Preparation

1. Steam the salmon for 15 minutes, then flake it apart. Meanwhile, gently thaw the spinach on low heat and then drain thoroughly by pressing it in a strainer.

2. To make the béchamel sauce: in a bowl, mix the cornstarch with a little cold milk; pour the remaining milk into a thick-bottomed saucepan set over low heat, add the butter and gradually stir in the diluted cornstarch. Continue stirring over very low heat until the sauce thickens; then stir in the grated Gruyère, season with a little salt, pepper, and nutmeg.

To Finish

Combine the spinach, salmon, and béchamel in a mixing bowl; adjust the seasoning to taste. Spread this filling in the center of each crepe, fold them over the filling, and place them side by side in a baking dish. Dot with pieces of butter and bake in a preheated oven at 180°C (356°F) for 10 minutes.
