\n – 1 Eggplant
\n – 1 Onion
\n – 200 grams Tomato Paste
\n – Herbes de Provence (as desired)
\n – Fresh basil (as desired)
\n – Olive oil
\n – Parmesan cheese
\n – Salt
\n – Pepper<\/p>\n

1. Start by thoroughly washing the eggplant and slicing it into thin pieces. Wrap these slices in plastic wrap and microwave them for 5 minutes at 900W power.<\/p>\n
2. While the eggplant is cooking, finely chop the onion and saut\u00e9 it in a skillet with some olive oil until golden. Add the eggplant slices to the skillet and continue to cook. Simultaneously, boil the pasta until it’s al dente.<\/p>\n
3. Stir in the tomato paste, Herbes de Provence, and fresh basil to the skillet with the onion and eggplant. Season with salt and pepper to taste. Drain the pasta and add it into the skillet as well.
