Start by beating the eggs with the sugar until the mixture triples in volume. Sift in the flour mixed with the baking powder. Whip the 188 g of heavy cream until it forms stiff peaks, then fold it into the egg mixture.<\/p>\n
Line a tall baking mold with parchment paper and pour the batter into it. Bake at 320\u00b0F (160\u00b0C) for approximately 1 hour and 10 minutes.<\/p>\n
Whip the mascarpone and the cold cream together using a mixer until stiff peaks form. Divide the cream into several portions to color each with food coloring (in this case, three colors were used).<\/p>\n
Once the sponge cake has cooled, slice it horizontally into three layers. Spread a layer of mango jam on the first layer, then add the colored creams using a piping bag.
