– 400g boneless chicken breast or thigh
\n– 200g rice noodles
\n– 1 cm piece of fresh ginger root
\n– 1 clove of garlic
\n– 1 stalk of fresh lemongrass
\n– 3 tablespoons soy sauce
\n– 1 tablespoon brown sugar
\n– 2 tablespoons neutral oil
\n– Fresh coriander leaves
\n– 1 stalk of scallion<\/p>\n

1. Finely slice the lemongrass, garlic clove, and ginger. Crush them together in a mortar with fish sauce, soy sauce, and brown sugar.<\/p>\n
