– Spinach: 400g
\n– Thick cream: 10cl
\n– Goat cheese rounds: 2
\n– Egg yolk: 1
\n– Puff pastry: 1 sheet
\n– Salt: to taste

1. If using fresh spinach: Blanch the spinach for a few minutes, drain well then chop and mix with the cream. If using frozen spinach, simply thaw it. Preheat the oven.<\/p>\n
2. Roll out the puff pastry and cut it into 4 equal pieces. Divide the spinach mixture (about 2 heaping tablespoons each), add half a goat cheese round on top of the spinach, and fold the pastry over to form small bundles.<\/p>\n
3. Brush the pastries with the beaten egg yolk.<\/p>\n
