This vibrant garden vegetable pizza brings back memories of the pizzas my Italian grandmother used to make during my vacations in Italy.<\/p>\n
\nFor 4 people:<\/p>\n
– 1 pizza dough
\n– 3 tbsp green pesto
\n– 1 eggplant
\n– 1 zucchini
\n– 1 red bell pepper
\n– 100 g mozzarella
\n– 2 tbsp olive oil
\n– 1 pinch salt and pepper
\n– 3 basil leaves<\/p>\n
1. **Preheat the Oven**
\n Preheat your oven to 400\u00b0F (approximately 200\u00b0C).<\/p>\n
2. **Prepare the Vegetables**
\n Slice the zucchini and eggplant into thin rounds, and cut the bell pepper into strips. Saut\u00e9 the vegetables in a pan with olive oil until they are lightly grilled.<\/p>\n
3. **Assemble the Pizza**
\n Roll out the pizza dough and spread it with green pesto. Arrange the grilled vegetables and mozzarella cheese on top.<\/p>\n
4. **Bake**
\n Place in the oven and bake for 15 minutes. Once done, remove from the oven and garnish with fresh basil leaves.<\/p>\n\n\n
