1. Prepare the ingredients
Boil the potatoes in salted water for about 25 minutes. Preheat your oven to 200 °C (about 400 °F). Slice the onion. Peel the cooked potatoes and cut them into large chunks.
2. Get the Camembert ready
Butter an ovenproof dish. Place the whole Camembert in the center of the dish. Make shallow cross-shaped cuts across the top of the cheese.
3. Make the cream mixture
In a small bowl, combine the crème fraîche with chopped parsley, a pinch of pepper, and a touch of chili if you like a little heat. Set this mixture aside.
4. Cook the lardons and onions
Heat a skillet without adding extra fat and lightly brown the lardons for a few minutes. Add the sliced onion and sauté together for 5–7 minutes until the onion softens and the lardons are cooked.
5. Assemble
Spoon the honey over the top of the Camembert. Arrange the potato chunks around the cheese in the baking dish. Scatter the lardon-and-onion mixture over the potatoes. Finally, pour the crème fraîche mixture evenly over the lardons and onions.
Final baking
Bake in the preheated oven for 25–35 minutes, until the Camembert is melted through and everything is hot and lightly golden. Serve immediately with a generous green salad.
